Chocolate Cake with Mocha Almond Crunch Frosting

Denver Mint Cookies

  • 3 cups flour
  • 1-½ cups ground walnuts
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup shortening
  • 1 cup sugar
  • ½ cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 - 16 oz box of Denver Mints, broken into small pieces

Combine the flour, walnuts, bking soda and salt. In a large bowl, cream the shortening and both sugars. Beat in the eggs, then beat in the vanilla extract. Gradually blend in the dry ingredients, then fold in the Denver Mints. Cover and chill at least 4 hours.

Preheat oven to 350°F. Drop batter by spoonfuls onto ungreased cookie sheets 1½" apart. Bake 10-12 minutes until lightly colored.

Makes 3-4 dozen cookies.
